Smokin' Some Cheese


 
I love the idea of using the Performer and that smoker tube. I have used my WSM, and the cheese tasted great, but of course keeping the temp down in a vertical smoker is always a challenge.
 
Outstanding Jerome. What a varied selection of cheese you have. I recently bought the A-MASE-N Smoker Tray. Going to try my hand at smoking some cheese with it soon. Hope my results are half as good as yours.
