Didn't feel like cooking tonight (UhOh, am I getting sick??), so shredded up some meat from Sunday's Ribs (http://tvwbb.com/showthread.php?44396-Sunday-Ribs) and tossed them in the CI with some Green Onion. Added a couple of eggs and scrambled away. Topped with a little Tiger Sauce for some zip!!



Short post, but it's one of those nights.

Short and sweet. We did leftovers tonight as well. Pork tenderloin in penne pasta. Gotta love using smoked meats as an ingredient in gourmet leftovers!
 
A rib omelet, I never thought of such an animal. I'll have to try it or something of the like. Nice going.
