Well, did a pork butt overnight for a birthday today. Just over a 13hr cook, and about 2 hours to rest while I did the potatoes and mac n cheese.

I sleep better knowing food is on the SF than I do on a kettle or the Summit, even when using my Billows temp controller.

On at midnight, Smokeboost for an hour and a half, solid bark so spritzed with apple cider vinegar, another hour and 15 roughly on Smokeboost, spritz again, bumped to 215 and rode it out. Wrapped at 156 with spritz in the bottom of pan. Pulled about 1:30, used Green Mountain Gold blend.

Another example of awesome cooking results with a SmokeFire. It is a shame that a bad launch and some teething issues have largely driven this innovative grill to mostly direct sales by Weber and a few other online retailers. I wish people could still compare them at Ace, Lowes and Home Depot. Let’s hope Weber keeps improving the quality of materials and resolves some nagging issues without losing the ability to crank out good like we see here.
