I am going to smoke venison tomorrow afternoon. The plan is to smoke it uncovered for 2 hours or so and then put into a disposable pan with some beef broth onions, carrots, red wine, etc for the rest of the cook (i am thinking 3 more hours or so). My question is do I put the roast on the grate or in the disposable pan in the beginning? And do yall have any suggestions on smoking venison. I have cooked it for years in the indoor slow cooker, but haven't tried to smoke it yet.
