Smoked Turkey

Beer interferred with my schedule yesterday. I had planned on brining todays turkey.........so I mixed up a small batch of brine this morning and injected with my Dial-O-Matic. Put on Junior with a couple apple chunks and hooked up the Digi Q! Pulled when the breast hit 163*, foiled and let rest on the counter for 1 hour.

Brine Injection recipe

1 cup Morton Kosher Salt
1/2 cup white sugar
1TBS Granulated Garlic
1 gallon cold water

Now I made that full batch and only used half for a 14lb turkey so plan accordingly.

Larry,
Nice pictures as usual (Loved the ribeye pics, too!) I have a whole turkey breast sitting in my freezer, think your injection would work with that, too?
Thanks for sharing.

Yes it would as long as it's a fresh breast and not a self basting breast (ie, Butterball). Check the sodium content, a fresh turkey should be less than 100mg, self basting will be closer to 330mg. If it's a self basting breast, just cook as is, otherwise it may end up too salty..

Better hide all that "hookup" to your smoker.
If Homeland Security comes by, they might knock on you door!
Just kidding. </div></BLOCKQUOTE>

I agree............

It's not self basting, made sure before I bought it. Thanks for the info!
