Smoked Turkey Parts

I usually include some turkey pastrami as part of our youngest daughter's Christmas gifts. Last year whole turkey breasts were ridiculously priced so bought an extra turkey and cut off the legs/thigs and wings. Was digging through the chest freezer a few days ago and found them, vacuum seals of course.

Thawed for a few days in the fridge and smoked them today on the kettle with Cowboy briquettes and Hickory chunks. Dry brined overnight and hit them with some SPOG before putting them on the grill. Vacuum packed in pairs and put back in the freezer. Been seeing a lot of recipes that call for smoked turkey. Probably be using some in a nice gumbo in the next week or so.
