Smoked Turkey Enchilada Casserole

I have alot of vacuum sealed smoked turkey legs and thighs and use them alot in beans, soups and pot pies. I decided I wanted to make a Enchilada Casserole with some of it, I usually use shredded beef for this recipe, but this turned out fantastic!

looks great, larry! i'm going to try that with some pulled pork leftovers. the pulled pork makes great quesadillas as well!

I Love cheese, that's my fav part of any casserole! I just like to eat the browned cheese off the top and that's it, I'm done. You can have the rest of it.
