Smoked some BB ribs yesterday.

I decided to smoke some BB's yesterday since I'm on vacation and haven't smoked anything in awhile. I decided to cook them at a little higher heat than I have in the past to see how they would turn out.

I used some Lambert's Sweet Rub O' Mine rub that I bought at Ace hardware awhile back.

I used the smoker that I bought off of CL last year and this was the second smoke on it. I initially had an out of round situation until I decided to spin the main body on the bowl and finally got it to sit right all the way around. That might be why I had some temp flucuations for awhile. I ended up having all of the lower vents closed and the top vent about 1/2 closed for most of the cook.

It was around 66 F outside and windy so I used a windbreak on the smoker.

I put the ribs on at about 12:20pm and took them off at about 5:00pm. The temps were varying a little bit but the range was from 255-290 F at it's highest with most of the cook time was between 264-273 degrees.

I initially forgot to add any wood so I added some cherry chips at about 3:00pm

Overall, I thought they turned out pretty good. I maybe could have used a little more rub since I coated them a little light but they were good and I was happy with how they turned out. I plan on cooking BB's at a higher temp from now on. I may cook a little higher next time.

Thanks everyone. I'm still learning as I think this was only my fourth cook on the WSM. It is a fun learning curve though. I forgot to mention that I used my Maverik 732 to monitor temps. I love this thing. It gives me more freedom and I don't have to go check the smoker every 15 minutes.

It attaches via a screw and wing nut. That makes the seal pretty snug. Then you just close off the other 2 bottom vents, turn on the unit and you're in biz. You also need to close the top vent 80% of the way.
