Smoked lil breakfast sausages


 
I'm looking for a new munchable to throw on the WSM. I've done moink balls, fatties, etc. I was thinking about smoking some little breakfast sausage links. Cut them in half after smoking, wrap in halved crescent rolls, and make mini-pigs in a blanket. Serve with warmed maple and butter, perhaps. Anyone ever try this? I figure smoked them at 225 until they hit around 150. They'll finish cooking in the oven.

After your links are smoked, put them on a hamburger bun and top them with a scrambled egg. Makes a great sandwich.
 
I did the Jimmy Dean 1lb rolls. I did a pair of them. I used hickory, and they turned out great. Broke up one of the rolls and mixed it with some eggs. It was OUT-OF-SIGHT!!!
