Smoked Habs and Jalapenos

With the nice weather we had and seeing some great looking habs at the store I decided to smoke some peppers again ... I was almost out of my smoked habs.

Did it quite different this time ... I smoked them for about 8 hours below 200ºF ... then finished in the oven at 150ºF for about 6 hours.

I'll leave them on the counter another couple of days to be sure they are dried through.

I used pecan wood and I can't wait to try them out!

I clicked on my Calgary weather link and it was 10ºC for a high on Monday. Indian summer, you kill me.

I'd like to do some peppers and Roma tomatoes this year.

We hit 57ºF for a high on Sunday ... Jan/Feb are normally the cold months ... it should be around 0ºF, but if we get the -40ºF here it's almost always in Jan/Feb.

Those peppers look great. I can smell them from here

I dry mine the Italian way. Not smoked, tied and hung long hots. Couple more weeks and they will be ready to drop into hot oil for a few seconds.

Shawn, the peppers look great! I have a question a little off topic. I'm in Calgary also. Got my WSM coming in a few days. Just getting into real BBQ. Where is a good place in town to get meat? Good ribs, brisket etc.. Any preferences?
