The weather was very nice today. Warm-to-hot but with a very cool breeze throughout the day. The forecast is 104 next weekend, so I better enjoy it now.
Brine for 4 hours and applied a lot of rub consisting of brown sugar, oregano, chipotle rub, thyme, garlic powder, ginger powder, basil spice, paprika, and cumin.
Loaded up two racks.
Kept the lid slightly open to bring up the heat.
Much better!
After 1 hour at 300 to 325, I applied Rays Buffalo sauce, then added more rub. The next 30 minutes, I maintained 275, and with the remaining 30 minutes I lowered it to 225, mopping with Rays Buffalo Sauce every 10 minutes.
The finishing product! Shared some with my neighbor, Chad. His wife made some great salsa, beans, and tortilla to go with it.
