Smoked Chuck Enchiladas

I found a 1lb bag of vacuum sealed chuck that has been in the freezer for close to a year. Plopped it in a pot of water, heated through, stuffed in corn tortillas, covered with enchilada sauce, cheese and into the oven for 20 minutes and then under the broiler until browned. I also made some beans and rice with leftover rice from chinese the other night along with a can of kidney beans, a little salsa, chili powder, cumin and granulated garlic and heated through. Very tasty quick dinner!!

larry, you're killing me. my current lifestyle doesn't allow all those carbs. but man oh man that looks great.

I didn't know people baked enchilada's with cheese on them

when I make ench it's always been w/chicken, I should try beef

Shoot Shawn I don't know if I should have put cheese on them or even if I should have baked them. But my wife usually makes an beef enchilada casserole (kinda like lasagna) and I did it similar to hers except I rolled them instead of layered it. I haven't made chicken enchiladas, but that sounds fantastic! If you have a good recipe I'd love to try it!!
 
pfft I'm no chef, I've looked at 2 enchilada recipes and I've eaten at taco time, taco bell and taco del mar. I might have used an Old El Paso enchilada kit like 28 years ago. That is the extent of my enchilada expertness

Both recipes are for chicken, rolled up and cheese on the inside, baked with sauce on the outside ... cheese on the outside is a revelation, lol

I probably never would have thought to try it because I read a recipe is what I'm getting at and it's one reason I love coming to the forums and that people like yourself take the time to post stuff. 'Think outside the bun' as Taco Bell would say!

I'll email ya the chicken enchilada recipe I make. I can't help but think of that moist slow cooked pulled turkey you make for a filling base.

They are. I usually go with a tomatillo sauce and white Mexican cheese (Asadero, etc.)
