This is my Easter cook!! We decided to break tradition and have chicken enchiladas for Easter so I though we would cook up a couple chickens an us the left overs for filling! Started with 2 5 lb birds, brined 12 hours in a really simple salt, sugar brine and the air dried for about 5 hours! Seasoned with a poultry rub I found the other day like this...

Planned for a short cook..did 1/2 chim unlighted and 1/2 hot reg kingsford, no water, vents wide open and a bit of cherry wood....

Very good!!! Rub was super tasty and very moist chicken! Left overs destined for Easter dinner! Oh got stuck making eggs tonight with my little one!

5 hours later still 300!! Love my weber!! Time to clean the grates and drink a beer or 3!!

You're a man after my own heart. For Christmas we made tamales at our house this year and instead of boiling the pork, I smoked it as if it was for pulled pork. They came out great.

But back to chicken... I just made two small roadside chickens so I would have some left over for Buffalo Chicken Macaroni and Cheese.

They were good but despite the foil packs with apple and black walnut, they didn't pick up much smoke flavor. I really need to get a rotisserie ring for one of my charcoal grills.

A nice twist on an Easter meal!

Haven't dyed eggs, carved a pumpkin, or put together a toy in years, kind of miss doing all that with my kids (when they were young) cherish the moments my friend!

Daniel the tortilla's were white corn.. Other than that and the chicken I put on the smoker I dont know much about the rest..super secret recipe I dont even know! But keep it coming cause I enjoy the heck out of if!

Bob I mis-spoke when I said "got stuck with" I agree...they grow up way to fast so I try and enjoy every little thing! Kids are a blast "most of the time"....

Hank... U an I need to talk...Tamales are something I have been wanting to try in the smoker but just have not worked up my confidence level quite yet!!! Sounds good!
