This is my Easter cook!! We decided to break tradition and have chicken enchiladas for Easter so I though we would cook up a couple chickens an us the left overs for filling! Started with 2 5 lb birds, brined 12 hours in a really simple salt, sugar brine and the air dried for about 5 hours! Seasoned with a poultry rub I found the other day like this...

Planned for a short cook..did 1/2 chim unlighted and 1/2 hot reg kingsford, no water, vents wide open and a bit of cherry wood....

Settled at 300 for the whole 2 hours!! Not much flux at all!

And played with some wild rice, sautéed beans, and a white wine reduction sauce!

Very good!!! Rub was super tasty and very moist chicken! Left overs destined for Easter dinner! Oh got stuck making eggs tonight with my little one!

5 hours later still 300!! Love my weber!! Time to clean the grates and drink a beer or 3!!
