Smoked Chicken & MEAT LOAF! My new WSM is Awesome!!

I'm a newbie to all of this, and assembled my new WSM yesterday. First I checked the calibration on the thermometer, then filled the water bowl with sand and a foil covered terra cotta plate (not water), and cooked chicken and meat loaf like I've never cooked before.

Man-o-man, this thing is more than awesome!

The only slow cook, smokey BBQ I've done, has been in a kettle along with a Smokenator, which I bought just to be sure I, and my family enjoyed the BBQ vs Grill taste. We loved the Smokenator flavor, but I didn't like all the futzing around you've got to do to keep the Smokenator going correctly. I investigated various smokers, read the forums, and chose the WSM. What a machine!

The WSM has to be the perfect cooker.

I loaded the WSM with KF Competition and Hickory, and without ANY, I repeat - without ANY, messing around it held at 225 degrees for 2 hours for the chicken... and it was PERFECT! It even started raining, and it still didn't blink. Unbelievable!

With the Smokenator, I would have been up and down checking the temp a dozen times.

While the chicken cooked, I made my famous bacon wrapped / no pan needed, meat loaf. I took the chicken off, cranked that baby up to 350 degrees and the meat loaf cooked for 1.5 hrs to perfection!

I am telling you that this is the easiest way to BBQ, and it is perfect. I've never had to watch my weight but I might have to now, as I think this thing can be addictive!

congrats on your first cook. I love the WSM. I was a ceramic user before and agree with you that the WSM is a perfect cooker.

I agree. The ease of use just can't be beat! Welcome to the board.

I've said this in the past: when deciding how much you want to spend on your first smoker, and you're thinking about the wsm, figure in the price of all new pants into the cost, because its inevitable that they'll have to be replaced within the year.
 
Congrats on your first cook and purchase. I didn't cook on my WSM much during the winter, but I've cooked on this thing about 12 times since January...almost every weekend!
