Steve,

Never having smoked cheese before, I cna't help you. However, did you check the LET'S COOK section of the wweb site? There is a section on smoked cheese with some helphul information and ideas.

Use a very small amount of a mild fruitwood, maybe apple, and for a very short period of time. See if you like the result. If so, experiment from there with longer times, other woods, etc.
