I recall asking how long vacuum packed smoked cheese would keep. I think it was Jim Minion who said months at least.
Well I've been doing a bunch every year at Christmas for a couple years now. This year I've got some left over from last year and I've got say it just keeps getting better tasting.
It was 2 yr old firm white cheddar, smoked with apple wood. I typically smoke it for 60 minutes.
Now it's 3 years old and I compared it side by side with some that's only sat 1 week. The smoke seems to mellow, almost sweeten and permeates the cheese instead of just being on the surface. By comparison the freshly done stuff tastes harsh.
It starts tasting really good after a few months.
