Smoked apple chutney

Ingredients
3lb apples, peeled, cored and roughly chopped
1lb onions, chopped
6oz sultanas
12oz light brown sugar
500ml cider vinegar
1 whole star anise
1tsp coriander seeds
1tsp cumin seeds
1/2 cinnamon stick
1/2tsp fresh grated nutmeg

Method
1. Add the spices and vinegar to a heatproof bowl. Stand over a pan of water. Bring the water to the boil. Remove the bowl from the pan, and leave the vinegar to cool. Strain.
2. Add the onions and cooled, spiced vinegar to a large pan, and heat over a low flame until the onions are soft.
3. Smoke the apples for 1 hour at 200F-225F. Chop again, and add to the pan. Cook until soft.
4. Add the sultanas and sugar and simmer for around 30 minutes, or until the chutney reaches the required consistency.

Good with pork :)
