I was going to do some salmon for apps for a party this friday. But I don't have any alder wood. any suggestions for other types of woods? I have apple, cherry and hickory

thanks

I'd vote for a light application of apple wood. I suspect that cherry would be okay, but I use apple a lot and I am more familiar with its properties. My disclaimer is that I have always used alder with salmon, but the apple should be really good too.

By the way, the Cooking topics section on the main web page has the recommendation of alder or fruit wood for the brown sugar salmon. I still vote for apple.

Aloha John... I live in the Pacific Northwest and if I don't have any alder or maple, I would use apple.

last time i smoked a salmon i used oak. but then i am not a gourmand by any stretch and prolly just dont know any better.

Did some salmon last week that we had caught and I used apple, never had it with alder wood. The apple was very nice, but I would go light on the wood no matter what you are using.
