Smoke Wood Question - Chunks vs Chips

I know the regular recommendation for smoke wood is chunks, say tennis ball to fist size. And when doing a brisket by the High Heat method, even this size is consumed pretty quickly. Chips would disappear in a flash. But sometimes it's easier for me to find chips than chunks. For example, right now my local BBQ supply joint has some really nice sounding blend from New England, but chips only.

I ran across an idea for using chips and forcing them to be consumed slower
Put wet wood chips on your fire side. Take a piece of heavy duty aluminum foil, be sure to soak chips (we like hickory), wrap them up real good and poke some holes in the top of the foil and then put them on the fire or coals. Now you're smokin'! Close your lid and leave them be. Don't be peaking. Just let them smoke.

Any ideas if this would work well to limit the consumption speed and still provide good flavor? Anyone tried this in a WSM?
 
I don't believe chips can absorb enough water for it to make a major difference in smoke time. Putting chips into foil packets is a good idea, but they still wont last long in a high heat cook.
 
Hey guys,
I'lll be traveling to Dallas in a couple of months. Does anyone know where I can get inexpensive wood logs or chunks over there? Also what kind do they have? In Miami I am out of luck when it comes to buying wood.
Also, anyone out there from Miami, FL??
 
Try layering your dry chips into/with your coals.
I used to make foil packs.(not a fan), used a SS smoker box (works alright), but I found this way to be easier and longer lasting IME..

OBTW, I read this little tip on the TVWBB.

Alex,

Check out doitbest.com . They're a hardware store network and will ship free to the stores in their network - there's one in Miami Beach. They've got 10lb bags of wood chunks of different types.
