OK, I've asked this question before on a different post but this situation is a little different.

I received my smoke wood (Apple, Cherry, & Pecan) from 800drywood.com yesterday. I opened one of the bags and noticed that the chunks still had the tree bark on them. It is a very thin layer of bark and the wood appears to be cut from branches.

My question is: Am I gonna have to remove the bark from these chunks before I use them? What would happen to my meat if I didn't remove the bark?

Mark,

Don't fret about removing the bark as long as it is clean, dry and tight to the wood. You will not harm your food by burning it.

The only times I'd remove the bark is if it is from the base of a big tree and exceedingly thick or if it shows any signs of being wet for an extended period. Wet, loose bark can harbor molds and various critters that probably won't bring any good flavors to the party.

Enjoy!

Ken
