W W Tyler TVWBB All-Star Mar 10, 2012 #4 I sear then smoke - got some leg quarters going on the Performer right now. About 3 minutes per side over direct coals, then 1 1/2 to 2 hours on the cool side. McCormicks "Applewood" rub and apple wood chunks. Comes out perfect every time!
