A friend just returned from Alaska with halibut and 60-80 lbs of OCTOPUS. Wants to know if it can be smoked? Heard it's pounded like abalone for cooking. Also, smoking clams? That sounds real do-able to me.

Never mind! I just found the info right here on the web site. Amazing, even how to smoke an octopus. Chris, you're alright - no matter what Minion says about you. LOL

Octopus??? hmmmmmm.......

Do you take them to 195 and pull them like in a tug-of-war?

Do you need 8 Polders to ensure even cooking?

Do you lay them flat, hang them from the dome, or press the suckers to the sides of the smoker?

I know, I know... don't knock it if you haven't tried it. /infopop/emoticons/icon_smile.gif

Jack,

You're one lucky man. Octopus is good stuff. Here in Spain it is usually boiled till tender in a copper pot (or, lacking that, in a stainless steel pot with a couple of copper coins tossed into the water). It is then cut into bite-sized pieces, sprinkled with olive oil and dusted with smoked paprika.

I've also tried the cooking instructions on this site, which make for a delicious dish. Just make sure you go easy on the salt in the marinade and in the "lomiing" (massaging) process. Mine came out too salty. I guess octopodes are real sponges when it comes to salt.

Here's a link to an interesting thread about preparing octopus on the WSM Hawaiian style: Tako

Good luck!
