Smithfield Ribs - Question

Hi All,

Think i saw another post on this as well. For Superbowl I made sesame chicken skewers which were excellent and i also made a few racks of ribs. My store only had Smithfield ribs, one rack in each cryovac. I was disappointed with the meat. It seemed to me very lean, more like a loin, and did not have as much flavor as I am used to. I know that they have tried to breed healthier pork and wondering if this is the case with Smithfield. Anyone else have this experience with the Smithfield or is it just me?

Were they baby backs or spares ?

I do not know if they are trying to breed healthier pork but I never care for Smithfield's ribs. They always look lean (I cook spares) and most of the time I see them they are enhanced which I will not cook.
 
If they say enhanced on the package then they will have the salt solution. If they say natural they will not. I usually see enhanced smithfields at the grocery stores.
 
My local Costco has the natural ones (loin back). I thought they were quite good. No gristle at all, meaty, the membrane was off, ready to go in the smoker without any prep.

I cooked Smithfield's Spares for Superbowl SWMBO brought home. They were enhanced. I thought I trimmed a lot fat off them. They ended up pretty good but I'd choose non enhanced if given a choice.
