Small rack on the Ninja

OK, got a small rack (3 or 4 bones) of baby backs on the Ninja for this evening's supper. Smoke is rolling nicely, I am using one of the built in temp probes and gonna bring them to an indicated 195 or so. Then I'll probe them and check tenderness.

OK, I have to be honest here. It did an incredible job. I double checked the Ninja temp probe accuracy against my TPro Lightning. On the nose. No smoke ring and I think it's because they don't burn fuel to make smoke. Simply ignite pellets in a separate chamber and circulate it with a fan. So it's not generating heat. (which is why this thing is capable of truly "cold" smoking. But the kitchen smelled like a genuine smoke house, the ribs were incredibly smokey as well. I cooked them to an indicated 192 deg, pulled them and allowed to rest for about 10 min.
Ribs were juicy, flavorful and perfect tug off the bone tender.

Well, while it did a wonderful job, I'm not declaring it "better" than anything else. Just "different". I can't say much else about it. If it was summer time, believe me I'm firing up one of the pits for a variety of reasons. But honestly this thing "killed it". And continues to amaze me with it's abilities
 
Well I did the other half rack of lamb tonight. I did things a little different. I used granulated garlic rather than fresh, some lemon zest in addition to some lemon juice, black pepper, thyme and oregano, and of course EVOO. But, no salt in the marinade. I also did not use the smoke. I set it for "grill" and low. And just let it roast on the grill plate.
I did salt the meat just as I placed it on the grill.
And well, this time it was incredible! Some of the best rack of lamb I have ever made, with any appliance or method. I'd scored the fat cap, and everything just rendered perfect to a wonderful crust.
I think even in summer I'll be pressing this little guy into service for lamb racks :D
 
Larry I’m following your reports on the ninja with great interest, heaven knows I don’t NEED more “stuff” but, knowing that things out there are either worth it or full on rubbish through someone with a fairly high standard saves me reading a ton of half baked reviews from people I have no idea what their qualifications are. I’m a dyed in the wool skeptic so, when I see something, I generally resist. I think your outlook on things that are “the best” is similar to mine.
 
I'll tell ya. I too was sooooo skeptical of this thing. But honestly when I saw the reviews on it from Tom Horsman I thought "these things look very promising". I know some here thinks he's full of :poop: :poop: But, I like his straight forward attitude. And really just comes across as someone who tells it like it is. Also after having run into him a couple times I got the impression what he thinks on stuff is pretty genuine.
Anyway I saw a couple of the smaller ones in person (at Costco of course :D ). I was impressed with the build quality and when the one I ended up buying hit Marketplace and literally looked like it had just been taken out of the box, and at a price about half store price, it just looked like was worth rolling the dice.
The shocker here to me, was just how spot on TH was in his assessments of them. And yeah, while there is a little "learning curve" it's pretty easy appliance to conquer with 1 or 2 tries as witnessed by yeah, my 1st half rack was "OK" but the second was a home run.
Also owning it, it's quite apparent Ninja did their homework on what people are looking for.
So yeah, I am quite honestly impressed with this very unassuming appliance can do.
It's a great little "winter" grill. And even though I've used it in temps down to -5F it seems totally "unfazed" by the low temps. Still heats quick stays hot. Honestly? Anyone interested in a Q320? It's sitting on my front patio and is not going to be pressed back into service. I see no need for it.
 
Larry has put me to shame when it comes to giving praise for this cooker and I commend him for drawing attention to it. I can only say that we have multiple Ninja products in our household and they have never disappointed us.

Well, there was the time I dropped a blade that landed on my leg and required stitches.
