Small rack on the Ninja

OK, got a small rack (3 or 4 bones) of baby backs on the Ninja for this evening's supper. Smoke is rolling nicely, I am using one of the built in temp probes and gonna bring them to an indicated 195 or so. Then I'll probe them and check tenderness.

OK, I have to be honest here. It did an incredible job. I double checked the Ninja temp probe accuracy against my TPro Lightning. On the nose. No smoke ring and I think it's because they don't burn fuel to make smoke. Simply ignite pellets in a separate chamber and circulate it with a fan. So it's not generating heat. (which is why this thing is capable of truly "cold" smoking. But the kitchen smelled like a genuine smoke house, the ribs were incredibly smokey as well. I cooked them to an indicated 192 deg, pulled them and allowed to rest for about 10 min.
Ribs were juicy, flavorful and perfect tug off the bone tender.

You are echoing what my Wife says about its rib cooks. Not that I feel differently, but she raves about them.

Makes me wonder how she really felt about all the times I made them on other cookers since 2015 :unsure:
 
Well, while it did a wonderful job, I'm not declaring it "better" than anything else. Just "different". I can't say much else about it. If it was summer time, believe me I'm firing up one of the pits for a variety of reasons. But honestly this thing "killed it". And continues to amaze me with it's abilities
