Small Party...How much to cook?

Having a small get together next weekend for my mother-in-law's 65th birthday. Will probably be about 15 adults and 12 kids. Will do dogs and burgers on my Brinkmann grill, mostly for the kids.

I planned on firing up the WSM for 2 Boston Butts, starting the night before, and also doing 6-8 slabs of BB ribs. Do these numbers seem about right? I'd rather have too much than not enough, we can always freeze / give away the leftovers, and some of the guests are pretty hearty eaters.

Will also make a big pot of Keri's Hog Apple Baked Beans and a few of the guests will bring snacks / appetizers. And of course, lots and lots of beer.

So does the amount of pulled pork and ribs seem about right?
 
Depending on the size of the butts I think you should have plenty of food. I've done a couple similar parties and that's about what I do.

Will probably be around 16 pounds of Boston Butt...at Sam's they are two in a pack and usually total around 15-17 pounds.

I'm wondering, logistically, the best way to handle putting the ribs on the smoker so that the ribs and pulled pork are ready and fresh at the same time. I don't think the WSM will hold two butts and 6-8 racks of ribs. The way I see it I have a few options:

1. Remove the butts from the smoker when done (~195) and hold them in a preheated cooler. I'm thinking I could hold them for 4.5 hours while the ribs are cooking, then remove the butts and pull the pork while the ribs are finishing up.

2. Remove the butts a few hours before they are done (~180). Finish the butts in the oven on 250 while the ribs are on the WSM. This would eliminate a few hours of cook time on the WSM.

3. Find a way to get all the meat on the WSM. I have one rib rack. But even with the shrinkage of the butts after cooking through the night, I didn't think I would have enough room. Any way to get two butts and 6-8 racks on the WSM at the same time?

Derek - it just me but I would pull the butts off early wrap in a towel and toss in small cooler. Stick the ribs on and you should be good to go.

don't hear up the house using the oven IMHO>

Of course this is a good reason to go out and get you another WSM. hehe Good luck with it! have a good time.
