Small Butts


 
Once the butts hit about 190* internal, probe for tenderness. If not tender, wait another 30min and probe for tender again. Repeat until tender. When tender, remove from smoker and let rest on counter until temp drops to about 170*, double wrap in foil and place in a cooler wrapped in towels until ready to pull. Remember that a fixed temp does not equate to tender which is what you want.
