Small Brisket Question

Hi All

I have a WSM 18" and am aiming to roast a small (3lb) brisket on there tomorrow. Im still getting used to timings so i wondered if once its wrapped can it be left on the heat after its reached 205. Im worried about taking a small joint off too early so wanted to find out if its going to cause problems leaving it on for potentially a few more hours or do i really need to take it off the heat once it hits temperature?

Take it off when you can stick a probe in it and it feels like you're going into soft butter. Once probe tender, take it off, double wrap with heavy duty foil, wrap a towel around it and stick it into a cooler. It can sit for up to at least 4 hours. I like to get at least 2 hours resting it in a cooler. It helps. Have fun.
edit: If you leave it on too long it will dry out.
