So the wife asked what I wanted for Christmas and I would really like a slicing knife for brisket. Any suggestions out there? I don't want to break the bank but need a fairly decent one. Thanks.
I purchased this knife. I know it is pricey but the knife is incredible. It gets ridiculously sharp and retains an edge for a very long time. At first I thought it was way too much to spend on a knife but it is so nice to work with and is a work of art as well.

I also consider the food industry equipment. I have a couple of Update International knives that have served me well. One is a slicer like at the link below and the other is a similar bread knife.

It's quite a knife and they gave it to me for a clearance price, presumably because I was waffling on whether or not to buy it.

I'm late to the party, but in case anyone else stumbles across this post: That Forschner 12" granton edge slicer is the cat's meow - I can't imagine a better slicing knife.
