Slap Happy on overnight cook

It is only 1am on a overnight cook of two packers and two butts and already slap happy. Is there anything better than when you get temp dialed in and the WSM runs like it is on an ATC? Watching the ET-732 move between 220 and 226.
 
Details, Brian! How were you running that cooker to keep her so steady? What's in your ring, and what's in your pan?

Hi Dave, I am using a full 18lb bag of KComp with a full water pan. At 3am I foiled the 2 brisket and moved them to the 10 degree cooler bottom rack and moved the two butts up top to speed them up a bit. My temps rose to about 245 because I was having some lack of sleep issues and darn near dropped my second butt, so the lid was off for about 4-5 minutes. I closed all the vents including the top to stop any out of control issues. After that the cooker settled in at 230 for the next three hours.

At 6:15 I just foiled the butts and checked the briskets and the cooker is now settled back to 225. My top vent has been wide open the whole cook and bottoms vents about 10-15% all around.

The butts are sitting in the stall at 171 and the briskets seem a little tuff yet a 185. I will be checking the briskets about every 30 mins until they are done.

At 11am I will crank the cooker up to about 275 for 60 chicken legs that have soaked in a brine(which reminds me I have to take them out of the brine) and smoke them for about an hour and finish off in the kettle. Also have 6lbs of some kielbasa to toss on while the chicken is on the kettle.

So far everything looks good and I will try to take some pictures but I may be a little busy later on. I will try for at least some money shots on the buffet table.

Shhhh, don't tell her we are throwing a suprise party for my mother in law. She is turning 65 and just finished her last round of kemo a month ago.
I love my WSM but sometimes I have to regret giving people some good bbq because those same people don't relise the work involed in cooking for 100+ people. My moto has been "If you don't get nun you shudda got here earlier!" I may put that on a t-shirt.
 
I feel your pain there...and it gets on my nerves when my bro-in-law or wife makes comments that sound like I'd just as soon bbq as go fishing. NOT. Now sure, bbq-ing is "fun" and a cool hobby, especially if the weather is nice, but to be honest, if we didn't have anyone to cook for, we wouldn't go to the lengths we go!

I'm sure someone's gonna realize all the trouble you went to though, and that's really cool doing that for your mother-in-law.

Dave everything you say is true. As far as my mother-in-law goes she is doing great and doctors think 100% recovery, thanks for the well wishes.
Gotta check the brisket.
 
I quit fishing several years ago...got to be too much work cleaning and putting away all those fish

Glad to hear the good news 'bout your MIL. Wish mine was still around (for my wife's sake).

Paul, just don't tell my mother-in-law. She thinks my trips to the river when I don't keep any trout are a total waste of time.

It's 1:45pm on sunday just woke up and still have some cleanup to do. The party had a great turnout and the food and cook went off without a hitch. Thanks to again for the well wishes and keeping me company for a looonnnggg overnight cook.
As a side note I did parlay this into two paying cooks next month, even though I was not all that happy with my food.
