I've been busy the past few weeks with work and the kids so I haven't had a chance to cook outside. Everyday I've come downstairs to this view. Don't they look lonely?
Well, not today, we're cooking. Got some skirt steak marinating in a garlic, lime, beer, sugar, soy marinade. Fired up some RO "Steak House" lump. First time using this stuff. Was ok but burned hot and fast. Probably won't use again.
Got the sides going. Fire wire taters seasoned with evoo, garlic, s&p. Cooked a slice of bacon in the CI and added the sprouts. A few sweet peppers for color and a jalepeno for me.
Sides hit the hot box inside to wait for the main event. Skirts hit the direct heat for a few minutes a side with a touch of mesquite.

And plated
The steak was delicious but the hit was the sprouts. My kids were fighting over them. Just goes to prove that bacon makes everything better.
