Single probe problem
So here's the story. Planning on having some people over Saturday around three and serving some pulled pork. Started getting everything ready tonight and realized my food temp probe for my ET-732 went bad a few months back and got tossed. Planning on putting the meat on around midnight Friday and hoping it will be done around noonish, then throwing them in a cooler for a few hours until everyone gets here and gets a few bevrages in them. My question being, should I put the probe I have in the butt or use it to monitor the smoker temp. I'd like to load the meat around midnight and get the smoker rocking then hope in bed for a little shut eye, probably wake up around 6 or 7. My guess is monitor the smoker temp and set the alarm in case it gets out of range, but also scared that with my luck I'll have butts that cook in a few hours and wake up to overdone butt. Given my situation, what would you do?
