Double bone in skin on chicken breast.
Seasoned and cooked 550 dome temp with SNS on the kettle.
Went back to making Canadian shingles again.
Crispier this time, nice and soft in the middle.
Served with sour cream.
Took about 3p minutes after the coals were red in the chimney.
Nice and juicy, 165 on the smaller side and 158 on the thicker side.
We ate the thicker side, smaller side is weekly lunch with yummy salad.

Last time I posted them they got named Canadian shingles.
Seems fitting.
Sliced, mandolin would be better but I can cut pretty good.
Lay them on the pan like you see, brush the top with olive oil.
Add spice, I go spog.
Baked 400 to 425 for a while like 20 minutes.
Add crumbled bacon and chives.
Back in for 5 minutes and add cheese and remove when it looks good.
Crispy edges and soft centres.
