Signals and Billows


 
I have a signals/billows I use from time to time on my WSK. Overall really good and I really love the full remote monitoring more than anything, though I am waiting on a new firmware update that is supposed to fix a rare glitch that causes something to freeze up...almost ruined my last brisket - I was part way through the cook, coasting along at my set temp when I noticed things on the app were TOO perfect - like straight line unwavering temp....I then realize it had stopped adjusting things. I was away from home and ran home and the WSK was almost 300 degrees (instead of the 225 that was set and being shown) and the fan was running.
 
Saw that thread Grant, it did worry me a little.

I wanted a signals and Thermapen one to replace some stuff I lost in a fire, I ordered the Billows because it was on sale.
 
I have Billows that I use with a Smoke X, so not exactly the same set up, but very similar.
An observation though about the Billows itself.
I have used the Billows on a 18" stock WSM, and I found it to provide more air than necessary, causing the WSM to overshoot the target temperature.
This issue may be due to the lack of an adjustable damper on the stock Billows.
Even if the fan isn't running, a significant amount of air seems to still get though the Billows, particularly if the fire is already established and is already drawing by natural convection.
For this reason, if you do get a Billows, I would encourage you to spend the extra few dollars to get the adjustable damper that permanently replaces the intake plug.
The damper allows one to throttle the intake to control the amount of air drawn in, whether the fan is running or not.
As always, YMMV, mine is only a sample size of one.

Agreed - It is pretty well mandatory...

I originally just experimented and drilled holes in the original plug - adding one hole at a time until I was happy with the airflow with my WSK - where it was always at a level where temperature was always reducing...
