Don't forget to flavor those black eyed peas with some of the smoky pork drippings. Smoky rendered pork fat is my secret ingredient in many bean dishes.

Cowboy Pinto Beans

* 1 pound dried pinto beans
* 8 cups water
* 1/4 to 1/2 pound salt pork (as lean as you can find)
* 1 14-ounce can whole tomatoes, with juice
* 4 large cloves garlic, crushed
* 1 large onion, chopped
* 2 tablespoons chili powder
* 1 teaspoon ground cumin
* 3 jalapeños, seeded and chopped
* 1 tablespoon Worcestershire sauce
* 1 cup barbecue Sauce (your favorite, or see Southwestern Barbecue Sauce)
* 1 teaspoon salt

Hank, This one is supposed to be a great one. Your's looks close to this one, tomatoes and BBQ sauce verses Rotel and no BBQ sauce is the big difference. When I make them I just put in whatever stikes me at the time. BigWheels Pintos
