I didn't know how this one was going to play out - right till the end.
Roasted some peppers:
Marinated a pound of shrimp in Mojo Crillo marinade, diced some onions, threw the onions in first with a little more of the marinade for a few minutes, & then the shrimp with all of its marinade in there for another few minutes - pulled it out of the cast iron & rinsed the skillet.
made some cheese sauce (2 tbsp butter, 2 tbsp flour, 1 cup almond milk, boil, stir 8oz shredded mozzarella, along with some red pepper flakes:
Diced the peppers (several anaheim & pasilla), mixed in the shrimp, onions, & rice:
Stirred it all up and pressed it in the pan---- I didn't know if this would be enchiladas or what.... the mozzarella cheese sauce was thicker than the sharp cheddar turned out....so that threw me
