Shrimp ABT's

Hi all,
I am going to try some shrimp ABT's tomorrow night and was wondering if you guys cook the shrimp a litte before making the ABT or do you wrap it up with the shrimp still raw.

I know that shrimp don't take very long to cook so I'm assuming that that shrimp would cook fine wrapped up in the bacon raw.

Your opinions will be greatly appreciated.
 
I don't cook bacon wrapped shrimp because of the disparity in cooking times of the 2 meats. I like my bacon on the crisp side. But to achieve that with an ABT the shrimp would be over-cooked (approaching rubber). Shrimp have a pretty small window when it comes to cooking them properly. The most common mistake people make with shrimp is over-cooking them. Now bacon wrapped oysters are something I really like

I'm with Paul on this one, I suspect your shrimpies would be very very rubbery by the time the bacon got to where it needs to be. Great idea, but I don't the execution will be where you want it to be in the end. Perhaps, if you are dying for a seafood ABT, you could put some choped shrimp in your filling, or canned crab, something along those lines may be ok.

I'm going to try a couple and see how they come out just for grins. I also have some oysters to try.

I'm getting an overnight shippment of shrimp and oysters before the oil hits my native Mobila AL and the prices go up.

what kind of shrimp mixture are you planning on using? It definitely sounds like it's worth trying.
 
Cooking bacon wrapped shrimp can be done. Make sure you have large shrimp and microwave your bacon to get it partially cooked. Wrapped the shrimp and do more of a direct type grilling over medium/high.

That sounds really good. Do oysters take longer to cook?
 
Follow up on the shrimp.

They came out great. I prepared the ABT's as I normally would no pre cooking and they turned out great. I cooked them on my gas weber at 350 degrees until the bacon was crispy and the shrimp was not overcooked at all. They were perfect and everyone ay the party loved them.

Joe, no, oysters don't take long at all; just long enough to cook the bacon. In addition, as I'm sure you're aware, they can be eaten in any degree from raw to fully cooked. Since they're full of 'juice', cook them till the bacon is crisp and they'll still be moist. The recipe is often referred to as Angels on Horseback. I like a strip of jalapeno added to the oyster before wrapping it in bacon. Use those good Galveston Bay oysters if you can get them!

Randy thanks I have a family party coming up and am going to give these a try. My family loves ABT's and shrimp too. So it should work out great. Thanks.
