Shredded BBQ Chicken Sandwich

Ray Lampe, a.k.a. "Dr. BBQ", does a shredded chicken sandwich for his catering business that he says is simple, but quite good. He discussed it in a post on The BBQ Forum in November, 2003.

Ray smokes whole, unseasoned chickens, then pulls the cooked meat and adds a little sauce, a little apple juice, and a little rub. Serve on your favorite bread or bun.

Thanks Chris. Wish I'd read this post before I went and brined 3 chickens and rubbed two more tonight.

Oh well... at least I'll have a lot of choices tomorrow.
 
My wife does a chicken/turkey BBQ by shredding the meat then adding some cream of celery soup, salt and pepper. There are places in Pennsylvaina that actually have it on their menus.

I've never had chicken or turkey with a red sauce.

Yes they do Chicken Gravy over Waffles.

I smoked about 50 lbs of chicken a few weeks ago. I used the BRITU rub, pulled it, made the LOCO Motion sauce from Weber's Big Book of Grilling.

Froze it.

Thawed out batch one and just had some tonight. It was !!!!!
