i'll be putting on a picnic sat. night....should I brine until then? I have cooked many butts, picnics in the past....they have all turned out great, I just wanted to try something a little different/better.

Thanks,

Tony

I believe the main reason to brine something is to keep it from drying out during the cook. Neither of those cuts suffer from being dry so I don't know if that is necessecary. If you are looking for something different you may want to try injecting for a different flavor.

I put a few slice/cuts into a Picnic one time, and them brined it. Waste of time for me. It did give a little more bark from the slice/cuts I put into it though. I inject Picnic all the time, and Butts maybe 1/2 the time. I agree, go that route instead of a brine. (I brined it for 14 hours)
