short ribs success

i got some nice short ribs and cooked them today. i changed the way i cooked them this time. i cooked them in the kettle indirect. average temp at 225 deg. took 4.5 hours before the tooth pick went in smoothly and easily. they are soooo soft ! yummo. usually come out tough and chewy. trust yer tooth pick !!
 
Well George in theory your cook sounds great.......however 'no pic's no cook'! I didn't happen!!!

Just kidding!! I love beef ribs, might pick some up today along with some spares!!

I'm glad to see the enforcement of "no pic's = no cook" going on. My wife can't help but laugh every time I bring out the camera when grilling/smoking. Taking "pictures of my meat" has a whole new definition in our house.
