Last weekend while smoking a Brisket I got bored and decided to throw a few more things on the smoker. Some worked and some didn't. A couple types of cheese and some heads of garlic worked out well though.

So how about it? Anyone make use of a little extra space on their smoker? You know, "sensuous" already using it? And if so, what do you like to do with it?

I usually add a fattie, ABTs, pig candy, MOINK balls. Sometimes a piece of ham to slice later. I'm curious how you did the cheese at the same time? Wasn't the heat too high for cheese?
 
what cheese did you use that didn't melt?

I wonder if you put any any kind of cheese in it BUT in a smallish container so when it melted, it would still get smoked but when cooled off would solidify. Any reasons why not?

I like cold pizza so I know all about cold cheese

On cheese:

I had not considered letting it melt.

What I did was use a slow melting cheese like Parmesan or Irish cheddar. Even then I put it on right when I light the smoker so it spends some time in there before the smoker gets up to temp. Letting the cheese melt is a good idea. Perhaps for a gorgonzola or some other type of blue?

I pull before it gets melted.

I saw a recipe for smoked butter in the Smoke & Spice book. I need to consider what I would use it on though to make it worthwhile. Haven't tried the ABT's. They look interesting.

Oh Man! Why didn't I think of it! I had a whole package of shrooms in the fridge. I could have smiked them for Omelettes the next morning.
