Second Smoke on the WSM 18.5


 
Did a butt on New Years that came out great even though it was rainy here in the south. Today I am doing whole 6 lb chicken spadcocked. Used a homemade rub that is a variation off of magic dust from Peace, Love and BBQ by Mike Mills and then added a healthy amount of salt over the rub. Running around 260. First smoke used a full water pan and had a hard time getting temps up, so this time I am using an empty pan wrapped in foil top and bottom.

Looks great and now I wish I had gotten some chickens to do the same this week. Congrats on 2nd smoke withe the WSM and post some pics of the finished product.
