Seasoning Pork Butts

I am planning on cooking 4 pork butts at a Cub Scout family campout. My question is will it adverserly affect the butts if I trim and season the butts 48 hours out? I have a lot to do to get ready for this campout and time is short. I want to spread the work load out if I can.

Depending on your seasonings, your flavors might get a bit "intense". If you use a lot of salt it might draw out too much water from the butt and cause it to be dry.

I'd suggest waiting till the last minute for seasoning and slather your butts with mustard. Not a heavy coat but just enough to hold your rub. Then put in the smoker. Lately my favorite mustard slather is chipotle mustard.

Maybe a few of your "Cubbies" could help you slather and rub the butts.

Hmmmmm... let the cubbies do it. Hmmmm.... = 1 part rub + 1 part dirt.

don't underestimate the booger residue on little ones' hands :p
 
I always season my butts 2 days ahead. No problems dring out. I put my seasoning on, usually Bad Bryron's Butt Rub, for 24 hrs and then slather in mustard and apply another coat of seasoning for another 24hrs. Smells wonderfull when take out of fridge to get ready for smoke.
