Whew....close call. Fell asleep too late last night while nice 7.5 pound butt was smoking on the WSM at 250 (lid temp) over Kingsford (Minion) and some nice chunks of hickory.
Was a little short on charcoal at the outset, but figured it would make it ok based on the last few smokes. For some reason (cold, wind, lt. rain) the smoker burned almost completely out by the time I woke up!!
I pulled the butt off and it was at about 150 or so. I wasn't sure if it had made the 192 I usually shoot for, so I tried pulling at some of the outer edge....hmm....looked done...but not sure...
Took a gamble that is was still on the way up when the fire died down. Foiled it in some heavy duty reynolds wrap and put it in the oven at 275. 90 minutes later it was at 190, so I pulled it out and wrapped it a second time in foil....and wrapped again in towels.
Well, I was lucky. It was the most tender butt I have done to date. Literally pulled apart in my hands with no effort.
Next time I won't forget to have extra charcoal on hand....
