Sausage makin day


 
Looks great Dwane, can you post the ingredients or a link for the casing sausage. I have really been wanting to try this.

The Kielbasa came out of Great Sausage Recipes & Meat Curing by Kutas, Jagerwurst came out of Charcuterie by Ruhlman, the Bratwurst I got somewhere - not sure so I guess I can post it, and the breakfast sausage is Alton Brown's. I do not feel comfortable posting a recipe from a cook book because it is copyrighted. Poli Has some open source recipes for one time use. He has a Brat recipe also but there are many others on the 'net. Simply search for Wisconsin or Sheboygan style brats.

Here's the recipe for 10 lbs

5 TBS Canning Salt
3 Eggs
1 Pint Cold Milk
1 TBS Pepper
1 TBS Mace (I used All Spice as a sub because I didn't have Mace)
1 tsp Ginger
1 TBS Nutmeg
