Sausage and Peppers

Well last night we met for our weekly church "small group" and we also do a "pot luck". Decided sausages and peppers ala Tony Soprano were in order. Put the Q320 to work as having the tighter cast iron grates makes it easier to work with. Results were delicious. I used sweet sausage but without the fennel seeds as many folks of non-Italian lineage find them a little objectionable. Marinated the pepper strips and sweet onions in EVOO, a little salt and some hot red pepper flakes while Q was heating up. Than dumped the pepper/onion mix on the grill and placed the sausages on top of them. Close the lid on low indirect heat and let it all cook with the sausages dripping flavor through the veg. Finished off the sausages for a little grill mark action (not too much) around the sides (perfect use of the outside burner of the big Q) and perfection.

That looks perfect! It's awesome that you can grill the sliced peppers & onions directly on the grate.

Just one more reason I get so angry about the cheaped out grates with spacing wide enough to drop a 2" thick porterhouse through. I could have easily done this on my Wolf or even the Genesis (it has the old style Summit 3/8" bar SS grates), but it looked like rain and I didn't want to be outside in the rain grilling so I pressed the Q into action. But with the more modern grills now no way I could do this

Nice cook Larry, I agree some of the grates I see now look like towel racks instead of cooking grates.

They're too small for the amount I do. Plus I have good grates so really no need. But I have looked at them
