This Saturday was our block party so I decided to roll out the smoker. I did two pork butts, one chuck roast, two fatties, one hunk of bologna and a can of spam. I finally got to use the ProQ stacker and it was great having the extra space but I got to tell you, its a pain in the butt getting the WSM lid off the stacker, the thing is a really tight fit. The other issue I had with it is my Maverick probe didn’t fit through the eyelet...argh! One of the fatties I tried rolling cream cheese in the middle and it didn’t work out so well, hence the fatty, ball you see in the picture. The bologna was good and the spam was kinda strange, maybe next time I’ll try it with brown sugar. I started getting a little thirsty so I figured around 2pm I could have a pre block party beer and a shot of tequila. The party was a blast as the weather was perfect and the band was really good. Someone called the cops on us but when they showed up they couldn’t do anything because the neighbor pulled a permit. Right after the cops came the fire dept arrived because one of the guests had a few too many and twisted her ankle really bad.
