The back ribs went on sale here @ $2.97 a pound, so on the menu they went. Keeping it simple tonight.
No trimming needed, I just seasoned with sea salt, and Penzey's 33rd and Galena Chicken and Rib rub. (it's unsalted)
Smoke roasted them on the Performer between 325 and 350 or so for an hour. Used a small piece of oak stave from a wine barrel for smoke wood.
After an hour I foiled them for about 45 mins or so. Then removed from foil and crisped them up with some Sweet Baby Ray's.
Just plated them with some mac salad. A nice summer meal accompanied with a nice glass of red. The ribs don't show well in this photo, but you can see some smoke ring. Ribs were tender and a decent amount of smoke on them. The rub adds a real nice flavour.
