At the Sam's here, you can buy whole selects or choice flats.

At my Sam's they sell USDA Choice flats, ranging from 4lbs to as high as 10lbs, most likely in the 6 to 7 lb range.

If you don't see a full brisket in the display ask the guys behind the window for a full one.

More than likely, it will vary from Sam's to Sam's. Here in Niagara Falls, I use to occasionally see some smaller flats in the case. A few weeks ago I was inquiring about the prices for brisket and he advised me they don't carry it any more because it doesn't sell in this area and that they end up throwing most of it out but they could order either flats or packers and have them in 2 to 3 days for you. Bottom line, if you don't see it, ask. If they don't have it in the back, they can probably get it for you.

If you see only flats in cryovac in the display case, I doubt they will have wholes in the back. If you see trimmed flats in repack trays, you might have a shot, as it means they may have been wholes to start. Worst case is you might have to special order a case and freeze what you don't want to use right away.

The Sam's in my neighborhood gets deliveries 2 or 3 times a week. If they don't have what you want in the case, all you have to do is ask them to put it aside for you when the next delivery comes in. They were cutting butts and flats in half before packaging as well as seperating point from flat. I asked if they ever sold whole butts / briskets and they said "sure" and that they'd put aside whatever I wanted. You may have to explain exactly what you want - they couldn't imagine that someone would want to buy the whole brisket - but they were suprisingly accomodating.
