Salmon is good for you. My prep was pretty much unadulterating to the protein. So yea, light, healthy and clean. You’d love it if you like salmon. The yakitori sauce worked well as I cooked the salmon kabobs over the CI pan. A gentle radiating heat. Keeps the salmon very moist and tender.
 
I do like it and cook it fairly often.
I just go skin side down portions indirect with peach smoke around 275 for about 30 minutes or so.
Hot smoke cooks until about 135.
This makes the fat delectable and when you cut into a piece the fat spills out all over the plate.
Juicy....... also rich.
I don't try any other cooks with it......maybe I should.
